Ingredients

2 large zucchini, sliced into long, thin strips

2 cups fresh spinach, washed and roughly chopped

1 cup shredded mozzarella cheese

1 cup crumbled feta cheese

4 large whole wheat or spinach tortillas

2 tablespoons olive oil, divided

1 teaspoon garlic powder

Salt and pepper, to taste

1 teaspoon red pepper flakes (optional, for added spice)

Fresh basil leaves, for garnish (optional)

Instructions

Prepare the Zucchini: Begin by preheating a grill pan or your outdoor grill over medium heat. In a mixing bowl, toss the sliced zucchini with 1 tablespoon of olive oil, garlic powder, and a generous pinch of salt and pepper. If you enjoy a little heat, add the red pepper flakes. Arrange the zucchini slices on the grill and cook for about 3-4 minutes on each side, or until they are tender and feature nice grill marks. Once done, remove from heat and set aside.

Sauté the Spinach: In a medium non-stick skillet, heat the remaining tablespoon of olive oil over medium heat. Once the oil is hot, add the chopped spinach and sauté for about 2-3 minutes until the spinach is just wilted. Stir occasionally to ensure even cooking. Once wilted, remove the skillet from heat and combine the sautéed spinach with the grilled zucchini in a large mixing bowl.

Assemble the Wraps: On a clean, flat surface, lay out one tortilla. Sprinkle 1/4 cup of shredded mozzarella cheese evenly over half of the tortilla. Layer this with a generous spoonful of the zucchini and spinach mixture, followed by 1/4 cup of crumbled feta cheese. Carefully fold the tortilla in half, creating a pocket for the filling.

Grill the Wraps: If needed, lightly oil the grill panel. Place the folded wrap on the grill and cook for about 3-5 minutes on each side, or until the tortilla is golden brown and the cheese is melted and gooey. Repeat this process for the remaining tortillas and filling.

Serve: Once all wraps are grilled to perfection, slice each one into halves or quarters for serving. Garnish with fresh basil leaves if desired. Serve warm alongside a small bowl of marinara sauce or your favorite dipping sauce for a delightful finish.
