2 large zucchinis, sliced into 1/4 inch rounds

1 cup shredded mozzarella cheese

1/2 cup marinara sauce

1/4 cup sliced pepperoni (or your choice of toppings)

1/2 teaspoon garlic powder

4 slices of sourdough bread (or your preferred bread)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Prepare the Zucchini: Begin by preheating your grill or skillet over medium heat. While it's heating, sprinkle the zucchini rounds with salt and pepper to enhance their flavor. Once the grill is ready, place the zucchini slices on it and cook them for approximately 2-3 minutes on each side, or until they become tender and develop appealing grill marks. Once grilled, remove the zucchini from the heat and set aside.

    Cheese Mixture: In a medium-sized mixing bowl, combine the shredded mozzarella cheese with the Italian seasoning and garlic powder. Stir the mixture thoroughly, ensuring that the seasonings are evenly distributed throughout the cheese.

      Assemble the Sandwich: Take a slice of sourdough bread and generously spread a layer of marinara sauce over it. Next, arrange a few of the grilled zucchini rounds on top, add some sliced pepperoni for extra flavor, and finish with a generous sprinkle of the seasoned cheese mixture.
