2 medium zucchinis, sliced into 1/2-inch thick rounds

1 cup marinara sauce (preferably homemade for optimal flavor)

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes (optional for added spice)

2 tablespoons olive oil

Salt and black pepper to taste

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

    Prepare the Zucchini: Rinse the zucchinis under cold water and slice them into 1/2-inch thick rounds. To promote crispness, pat the rounds dry with a paper towel to eliminate excess moisture.

      Season the Zucchini: In a mixing bowl, combine the zucchini rounds with olive oil, Italian seasoning, garlic powder, and a pinch of salt and pepper. Toss well until all slices are evenly coated.

        Roast the Zucchini: Spread the seasoned zucchini evenly on the prepared baking sheet in a single layer. Roast in the preheated oven for approximately 10-12 minutes, or until the zucchini starts to soften and develops a light golden color.
