1 medium zucchini, grated with excess moisture squeezed out

1 pound ground turkey or chicken

1/2 cup whole wheat breadcrumbs

1/4 cup finely grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 large egg, beaten

Olive oil spray or 2 tablespoons olive oil for grilling

1 cup marinara sauce (for dipping)

Skewers (metal or soaked wooden skewers)

Preheat the Grill: Begin by preheating your grill or grill pan over medium heat. If you're using a grill pan, lightly coat the grates with olive oil to prevent sticking.

    Prepare the Mixture: In a large mixing bowl, combine the grated zucchini, ground turkey, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, dried oregano, smoked paprika, salt, black pepper, and beaten egg. Using your hands or a spoon, mix thoroughly until all ingredients are well incorporated.
