8 ounces elbow macaroni

2 medium zucchinis, grated

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

½ cup cream cheese, softened

1 cup milk

½ teaspoon paprika

½ teaspoon salt (or adjust to taste)

¼ teaspoon black pepper

½ cup breadcrumbs (optional for a crunchy topping)

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package directions until al dente (typically about 8-10 minutes). Once cooked, drain the pasta in a colander and set aside.

      Sauté the Zucchini:

        - In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for approximately 3-4 minutes, or until the onion becomes translucent. Next, stir in the minced garlic and grated zucchini, cooking for an additional 5-6 minutes. The zucchini should be tender and most of its moisture should have evaporated. Season the mixture with salt and black pepper to enhance flavors.

          Prepare the Cheese Sauce:

            - In a medium saucepan, combine the softened cream cheese and milk. Heat over low heat, stirring continuously until the cream cheese has completely melted. Gradually add the shredded sharp cheddar and mozzarella cheeses, stirring until the mixture is smooth and creamy. Spice it up with paprika and adjust the salt and pepper to your preference.

              Combine Everything:
