2 cups cooked Jasmine or basmati rice (preferably day-old for better texture)

1 medium zucchini, grated (approximately 1 cup)

1/2 cup grated carrot

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1/4 cup Parmesan cheese, grated (optional for added flavor)

1/4 cup all-purpose flour (plus extra if needed)

1 large egg, beaten

1 teaspoon soy sauce

1 teaspoon sesame oil

Salt and pepper, to taste

1 cup breadcrumbs (for coating)

Oil for frying (such as vegetable or canola oil)

Prepare the Vegetables: Start by grating the zucchini and placing it in a clean kitchen towel. Twist and squeeze the towel to extract excess moisture from the zucchini. This step is crucial for ensuring that the rice balls maintain their shape during frying.

    Mix the Base: In a large mixing bowl, combine the cooked rice, grated zucchini, grated carrot, chopped green onions, and minced garlic. If you’re using Parmesan cheese, add that as well. Stir the mixture thoroughly until all the ingredients are evenly incorporated.

      Add Bindings: In a separate small bowl, whisk together the beaten egg, soy sauce, sesame oil, salt, and pepper until well combined. Pour this egg mixture over the rice and vegetable mixture and gently fold everything together. Ensure that all ingredients are well-coated and the mixture starts to come together.

        Shape the Balls: Take portions of the mixture and form them into small balls, roughly the size of a golf ball. If the mixture is too sticky or wet and difficult to shape, gradually sprinkle in additional flour until the desired consistency is achieved.

              Drain and Serve: Once the rice balls are perfectly golden, use a slotted spoon to remove them from the oil. Place them on a paper towel-lined plate to absorb any excess oil.
