When it comes to achieving the perfect crispy texture in zucchini chips, olive oil plays a pivotal role. Not only does it help in achieving that delightful crunch, but it also enhances the overall flavor profile of the chips. Olive oil contains healthy fats that contribute to crispiness by allowing the zucchini to cook evenly and preventing moisture from making the chips soggy.

Ingredients

2 medium zucchinis

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Sea salt (to taste, approximately 1 teaspoon)

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese (optional)

Fresh herbs (such as rosemary or thyme) for garnish (optional)

Instructions

Begin by preheating your oven to 225°F (110°C). To make cleanup a breeze, line two baking sheets with parchment paper.

Thoroughly wash and dry the zucchinis. Using a sharp knife or a mandoline slicer, slice the zucchinis into thin rounds, about 1/8 inch thick. Uniformity is key, so take your time to create evenly sized pieces for consistent cooking.

In a large mixing bowl, pour in the olive oil and add the garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Stir well until the oil thoroughly combines with the spices, creating an aromatic blend.

Add the zucchini slices into the bowl, tossing them gently until they are evenly coated with the oil-spice mixture. If you’re incorporating Parmesan cheese for extra flavor, add it at this point and toss again to distribute evenly.

Transfer the zucchini slices onto the prepared baking sheets, arranging them in a single layer with space between each piece to promote crispiness. Avoid overlapping, as this prevents proper browning.

Bake the zucchini in the preheated oven for approximately 2 hours, or until they turn golden brown and crispy. Be sure to flip the slices halfway through the baking time to achieve an even texture on both sides.

Once baked to perfection, remove the trays from the oven and let the chips cool on the baking sheets for a few minutes. This step allows them to harden further, enhancing their crunchiness.

For an elegant finish, sprinkle a handful of fresh herbs over the chips just before serving. These delightful zucchini chips make a perfect healthy snack or an enticing appetizer for gatherings!
