Ingredients

1 medium zucchini, grated

1 can (15 oz) black beans, rinsed and drained

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese (optional)

1 small carrot, grated

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg (or flax egg for a vegan option)

2 tablespoons olive oil (for frying)

Burger buns (for serving)

Lettuce, tomato, and any preferred toppings (for serving)

Instructions

Prepare Zucchini: Start by grating the zucchini. To reduce moisture, wrap the grated zucchini in a clean kitchen towel or cheesecloth, and twist to squeeze out excess liquid. This step is crucial for ensuring that the burgers hold their shape while cooking.

Mix Ingredients: In a large mixing bowl, add the rinsed and drained black beans. Use a fork or potato masher to mash them until mostly smooth, leaving some small chunks for texture. Next, incorporate the squeezed zucchini, grated carrot, chopped onion, minced garlic, breadcrumbs, and Parmesan cheese (if using). Sprinkle in the cumin, smoked paprika, salt, and black pepper. Stir the mixture until everything is evenly combined.

Bind the Mixture: Crack the egg into the mixture (or add the flax egg), mixing it thoroughly to bind the ingredients. The overall mixture should feel wet but cohesive. If it appears too dry, you can add a splash of water, or if it’s too wet, sprinkle in a bit more breadcrumbs to achieve the right consistency.

Form Patties: With clean hands, take portions of the mixture and shape them into patties, approximately 3-4 inches in diameter. You should end up with about 4-6 patties, depending on the size you prefer.

Cook the Patties: Heat a non-stick skillet over medium heat and add the 2 tablespoons of olive oil. Once the oil is hot, carefully place the patties in the skillet, making sure not to overcrowd the pan. Cook each side for about 4-5 minutes or until they are golden brown and crispy.

Assemble Burgers: If desired, toast your burger buns for added texture. Place a cooked patty on each bun and pile high with fresh lettuce, slices of tomato, or any toppings you love. Add flavorful sauces such as pesto, mayonnaise, or a dollop of guacamole for a delicious finish.

Serve: Savor your warm zucchini bean burgers either on their own or alongside a side of sweet potato fries or a crisp salad for a complete meal!
