4 medium zucchinis, spiralized into zoodles

2 tablespoons olive oil

2 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon ground nutmeg (optional)

Salt and pepper to taste

Fresh parsley, finely chopped (for garnish)

Optional: 1 cup cooked chicken or shrimp, chopped (for added protein)

Create Zoodles: Begin by spiralizing the zucchinis to form long noodles, known as zoodles. If you don’t have a spiralizer, carefully use a vegetable peeler to create thin strips that resemble noodles. Set the zoodles aside in a colander to drain any excess moisture.

    Sauté Garlic: In a large skillet, pour in the olive oil and heat it over medium heat. Once the oil is shimmering, add the minced garlic and sauté for approximately 1 minute, stirring constantly, until the garlic becomes aromatic. Be wary of burning the garlic, as it can turn bitter!

      Make the Alfredo Sauce: Reduce the heat to medium-low, then slowly pour in the heavy cream while stirring. Allow the cream to warm gently. Gradually whisk in the freshly grated Parmesan cheese, continuing to stir until the cheese has fully melted and the sauce develops a smooth, creamy texture.

        Season to Perfection: Mix in the garlic powder, onion powder, and ground nutmeg (if using). Taste and adjust the seasoning with salt and pepper. If the sauce is too thick for your liking, thin it out with a splash of water or an extra drizzle of cream.
