1 medium head of cauliflower, cut into bite-sized florets

2 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon chili powder

Sea salt and freshly ground black pepper, to taste

1 cup of your favorite BBQ sauce

1 cup shredded sharp cheddar cheese

4 large whole wheat or spinach wraps

1 cup shredded leafy lettuce (romaine or iceberg works great)

½ cup diced fresh tomatoes

¼ cup thinly sliced green onions (scallions)

Optional: slices of ripe avocado for garnish

Instructions
 

Preheat the oven: Begin by preheating your oven to 400°F (200°C) to ensure it's hot and ready for roasting.

    Prepare the cauliflower: In a large mixing bowl, combine the cauliflower florets with the olive oil, smoked paprika, garlic powder, onion powder, chili powder, sea salt, and black pepper. Toss well until the florets are evenly coated in the spices and oil.

      Roast the cauliflower: Spread the seasoned cauliflower in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for approximately 20-25 minutes, or until the cauliflower is tender and lightly browned; remember to stir the cauliflower halfway through cooking for even roasting.

        Add BBQ sauce: In the final 5 minutes of roasting, remove the baking sheet and drizzle the BBQ sauce over the cauliflower. Gently toss to coat the florets evenly, then return to the oven for the sauce to caramelize, about 5 more minutes.

          Melt the cheese: Once the cauliflower is cooked, take it out of the oven and sprinkle the shredded cheddar cheese over the hot BBQ cauliflower. Place it back in the oven for an additional 5 minutes, or until the cheese is fully melted and bubbly.
