1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Juice of 1 fresh lime

4 large flour tortillas

1 cup shredded cheese (cheddar or Mexican blend recommended)

Fresh cilantro, chopped (for garnish)

Sour cream, guacamole, or salsa (for serving)

Marinate the Chicken: In a large mixing bowl, add the thinly sliced chicken breasts along with olive oil, minced garlic, chili powder, ground cumin, smoked paprika, lime juice, and a generous pinch of salt and pepper. Toss the chicken well to ensure all pieces are evenly coated. For optimal flavor, allow the chicken to marinate for at least 15 minutes while you prepare the vegetables.

    Cook the Vegetables: Heat a large skillet over medium-high heat and add a splash of olive oil. Once hot, add the sliced onions and both the red and green bell peppers. Sauté for approximately 5-7 minutes until the vegetables are tender and start to caramelize. Sprinkle with salt and pepper to enhance the flavor. After cooking, transfer the sautéed vegetables to a plate, keeping them warm while you cook the chicken.
