Turkey Chili and Cheese Mini Sliders

Ingredients
  

1 pound ground turkey

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, with juices

1 small onion, finely chopped

2 cloves garlic, minced

1 cup bell peppers (mixed red and green), finely diced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon ground black pepper

½ cup shredded cheddar cheese, divided

12 mini slider buns

Sour cream and chopped green onions for garnish

Instructions
 

Cook the Turkey: In a large skillet over medium heat, add the ground turkey. Cook, stirring occasionally, for about 6-8 minutes, breaking it apart with a spatula until it's browned and fully cooked. Drain any excess fat if needed.

    Sauté Vegetables: Add the finely chopped onion, minced garlic, and diced bell peppers to the skillet with the turkey. Sauté the mixture for approximately 5 minutes, or until the vegetables are softened and fragrant.

      Add the Seasonings: Sprinkle in the chili powder, cumin, smoked paprika, salt, and black pepper. Stir to combine and cook for an additional minute, allowing the spices to release their flavors.

        Incorporate Beans and Tomatoes: Mix in the rinsed black beans and canned diced tomatoes with their juices. Stir well and bring the mixture to a gentle simmer. Reduce the heat and let it simmer for 10-15 minutes, stirring occasionally, until the chili thickens slightly.

          Cheese Melting: Stir in half of the shredded cheddar cheese (¼ cup) and mix until it's melted and well combined with the turkey chili mixture.

            Prepare Slider Buns: While the chili simmers, preheat your oven to 350°F (175°C). Arrange the mini slider buns on a baking sheet and lightly toast them in the oven for about 5 minutes until they're warmed and slightly crispy.

              Assemble Sliders: Remove the toasted buns from the oven. Spoon a generous amount of the turkey chili mixture onto the bottom half of each slider bun. Sprinkle the remaining cheddar cheese (¼ cup) over the chili.

                Bake the Sliders: Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is bubbly and slightly golden.

                  Garnish and Serve: Once baked, remove from the oven and top each slider with a dollop of sour cream and a sprinkle of chopped green onions. Place the other half of the bun on top to complete each slider. Serve warm and enjoy your delicious creations!
