1 red bell pepper, diced

2 green onions, sliced (keeping the white and green parts separate)

1 small carrot, diced

2 large eggs, lightly beaten

3 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon oyster sauce

1 teaspoon sugar

1 tablespoon fresh lime juice

Fresh cilantro leaves for garnish

Sliced cucumber and lime wedges for serving
