2 medium sweet potatoes, peeled and diced into ½-inch cubes

1 tablespoon olive oil

1 small red onion, chopped

2 cloves garlic, minced

1 red bell pepper, chopped into bite-sized pieces

1 can (15 oz) black beans, drained and rinsed thoroughly

1 cup corn kernels (can use fresh, frozen, or canned)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and freshly ground black pepper, to taste

1 avocado, diced

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Optional: ½ cup shredded cheese (cheddar or pepper jack)

Instructions
 

Prepare the Sweet Potatoes: Heat the olive oil in a large skillet over medium heat. When the oil shimmers, add the diced sweet potatoes. Cook them for 10-12 minutes, stirring occasionally to promote even caramelization, until they become fork-tender and develop a light golden color.

    Sauté Aromatics: Add the chopped red onion to the skillet with the sweet potatoes. Sauté for an additional 3-4 minutes until the onion becomes translucent. Stir in the minced garlic and red bell pepper, cooking for 2-3 more minutes until the bell pepper has softened and releases its aroma.

      Incorporate Beans and Corn: Add the black beans, corn kernels, ground cumin, smoked paprika, chili powder, and season with salt and freshly ground black pepper. Stir everything well to combine, and cook for another 5 minutes until the mixture is heated through and all the flavors meld together.
