1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or fresh)

1 small onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup diced tomatoes (can use canned)

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

Fluff the rice with a fork before serving to separate the grains.

    Prepare the Turkey Mixture: While the rice cooks, heat the olive oil in a large skillet over medium heat. Once hot, add the diced onion and bell pepper.
