Sea salt and freshly cracked pepper, to taste

1 tablespoon balsamic vinegar

8 wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes prior)

1/2 cup unsalted butter, softened to room temperature

Zest and juice of 1 large lemon
