Ingredients

1 lb flank steak, cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon fresh parsley, chopped (for garnish)

For the Herb Butter:

1/2 cup unsalted butter, softened to room temperature

2 cloves garlic, minced

1 tablespoon fresh parsley, finely chopped

1 tablespoon fresh chives, finely chopped

Zest of 1 lemon

Salt and black pepper, to taste

Instructions

Marinate the Steak:

    - In a large mixing bowl, whisk together olive oil, sea salt, black pepper, garlic powder, smoked paprika, thyme, and rosemary until well blended.

      - Add the flank steak cubes to the bowl, ensuring each piece is thoroughly coated with the marinade.

        - Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to meld. For a deeper flavor, marinate for up to 2 hours.

          Prepare the Herb Butter:

            - In a small mixing bowl, combine softened unsalted butter, minced garlic, chopped parsley, chives, and lemon zest.

              - Season the mixture with a pinch of salt and a dash of black pepper. Blend until the ingredients are evenly incorporated and the mixture is creamy.

                - Transfer the herb butter onto a large piece of parchment paper. Shape it into a log and tightly rollback. Refrigerate for about 30 minutes or until firm.

                  Skewer the Steak:

                    - Preheat your grill or grill pan to medium-high heat.

                      - Carefully thread the marinated steak cubes onto skewers, ensuring to leave a small gap between each piece for uniform cooking. (If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.)

                        Grill the Skewers:

                          - Place the skewers on the preheated grill and cook for approximately 3-4 minutes on each side. Grill until the steak reaches your desired doneness (medium-rare: 130°F, medium: 140°F).

                            - Turn the skewers occasionally for an even sear on all sides.

                              Serve:

                                - After grilling, remove the skewers from the grill and let them rest for a few minutes to retain juiciness.

                                  - Slice the chilled herb butter into rounds and place a pat on each warm steak skewer. Finish with a sprinkle of freshly chopped parsley for garnish.

                                    Enjoy!

                                      - Serve the Tender Herb Butter Steak Skewers alongside your favorite sides, such as grilled vegetables, fluffy rice, or a refreshing green salad for a complete meal.
