1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

2 medium zucchinis, spiralized to create zoodles

1 bell pepper (any color), diced

1 small red onion, finely diced

2 cloves garlic, minced

1 packet (1 oz) taco seasoning

1 cup cherry tomatoes, halved

1 can (15 oz) black beans, thoroughly rinsed and drained

1 cup corn (can use fresh, frozen, or canned)

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper, to taste

Optional toppings: shredded cheese, sour cream, sliced jalapeños

Instructions
 

Cook the Chicken: In a large skillet, pour in 1 tablespoon of olive oil and heat over medium-high heat. Carefully add the diced chicken and sprinkle with taco seasoning, stirring well to coat. Cook for about 5-7 minutes or until the chicken is fully cooked and no longer pink in the center. Once cooked, remove the chicken from the skillet and set it aside.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Toss in the diced red onion, bell pepper, and minced garlic. Sauté for approximately 3-4 minutes, stirring frequently until the onions turn translucent and the peppers are tender.
