Ingredients

2 cups plain Greek yogurt

2 tablespoons honey or maple syrup (sweetness can be adjusted to taste)

1 teaspoon pure vanilla extract

1 cup fresh strawberries, hulled and sliced

1/2 cup granola (your choice of flavor for variety)

1/4 cup mini dark chocolate chips (optional but delicious)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Yogurt Mixture: In a medium mixing bowl, blend together the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Stir vigorously until the mixture is smooth and creamy. Taste the mixture and add more honey or maple syrup if you prefer a sweeter flavor.

Spread the Yogurt: Line a baking sheet (approximately 11x17 inches) with parchment paper for easy removal. Pour the yogurt mixture onto the lined baking sheet, using a spatula to spread it evenly into a rectangular layer about 1/4 inch thick.

Add the Toppings: Carefully arrange the sliced strawberries evenly over the yogurt layer. Next, sprinkle the chosen granola on top, followed by optional mini dark chocolate chips. Gently press down on the toppings with the back of a spoon to help them adhere to the yogurt.

Freeze: Transfer the baking sheet to the freezer and freeze for at least 4 to 6 hours, or until the yogurt bark is completely solid.

Break into Pieces: After the freezing is complete, take the yogurt bark out of the freezer. Allow it to sit at room temperature for a few minutes to soften slightly, which will make it easier to break apart. Use your hands to break the bark into irregular pieces of your preferred size.

Serve and Garnish: If desired, add a fresh touch by garnishing with mint leaves just before serving. Enjoy your refreshing Strawberry Yogurt Bark immediately, or store any leftover pieces in an airtight container in the freezer for up to two weeks for a delightful frozen snack later.
