1 lb (450g) boneless chicken breasts, thinly sliced into strips

1 cup fresh pineapple, diced into bite-sized pieces

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 small red onion, sliced

3 cloves garlic, finely minced

1 tablespoon fresh ginger, finely minced

2 tablespoons vegetable oil

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon sriracha sauce (adjust according to your heat preference)

1 tablespoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)

Salt and pepper to taste

1/4 cup green onions, chopped (for garnish)

Cooked jasmine rice or rice noodles (for serving)

Marinate the Chicken: In a medium bowl, whisk together the soy sauce, honey, sriracha sauce, salt, and pepper. Add the sliced chicken breast and toss to coat thoroughly. Cover and let marinate in the refrigerator for at least 15 minutes, which allows the chicken to absorb the rich flavors.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until it shimmers, indicating it’s ready for cooking.

      Cook the Chicken: Carefully add the marinated chicken to the hot skillet in a single layer.
