Ingredients

2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and pepper, to taste

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1 jalapeño, sliced (optional)

1 cup shredded cheddar cheese (or dairy-free cheese)

1/4 cup sour cream (or Greek yogurt)

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for the sweet potato layers.

Prepare the Sweet Potatoes: Thoroughly wash and peel the sweet potatoes. Carefully slice the potatoes into thin rounds, aiming for a thickness of about 1/4 inch. Thin slices will ensure they turn out crispy when baked.

Season and Coat: In a large mixing bowl, combine the sweet potato slices with olive oil, smoked paprika, garlic powder, ground cumin, and a good pinch of salt and pepper. Toss the slices gently until they are evenly coated in the seasoning mix.

Arrange on Baking Sheet: Line a large baking sheet with parchment paper. Evenly spread the seasoned sweet potato slices in a single layer on the sheet, ensuring they do not overlap. This will promote even cooking and crispness.

Bake the Sweet Potatoes: Place the baking sheet in your preheated oven and bake for 25-30 minutes. Flip the sweet potato slices halfway through cooking to achieve a uniform golden color and crispy edges.

Build the Nachos: Once the sweet potatoes are done baking, remove them from the oven. Layer the sweet potato slices on a large, oven-safe serving dish or an additional baking sheet. Start with the sweet potato base, then add a layer of black beans, followed by corn, halved cherry tomatoes, sliced jalapeños (if using), and finish with a generous sprinkle of shredded cheese.

Melt the Cheese: Return the assembled nachos to the oven for an additional 5-7 minutes, or until the cheese is melted, bubbly, and slightly golden.

Top and Serve: Take the nachos out of the oven and carefully top them with diced avocado, a dollop of sour cream (or Greek yogurt), and a sprinkle of freshly chopped cilantro. Serve immediately with lime wedges on the side for an invigorating citrus kick.
