Sweet Potato Egg and Cheese Burritos

2 medium-sized sweet potatoes, peeled and diced into 1/2-inch cubes

4 large eggs

1/2 cup shredded sharp cheddar cheese

1/4 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 large flour tortillas (burrito size)

2 tablespoons olive oil

1/4 cup chopped fresh cilantro (optional for garnish)

Salsa or hot sauce, for serving (optional)

Instructions
 

Cook the Sweet Potatoes: In a medium-sized pot, fill with water and bring to a boil over high heat. Carefully add the diced sweet potatoes and cook for about 10-12 minutes, or until they are fork-tender. Drain the sweet potatoes in a colander and set aside.

    Sauté the Sweet Potatoes: In a large skillet, heat the olive oil over medium heat. Once hot, add the boiled sweet potatoes to the skillet. Sprinkle with garlic powder, onion powder, and season with salt and pepper. Sauté the sweet potatoes for about 5-7 minutes, allowing them to caramelize and develop a light golden color. Remove the skillet from heat and set aside.

      Prepare the Eggs: In a mixing bowl, whisk together the eggs, milk, and a pinch of salt and pepper until well combined. Return the skillet to medium heat (no need to wash it) and pour in the egg mixture. Cook the eggs gently, stirring frequently until they are fully cooked and fluffy, about 3-5 minutes.

        Combine Ingredients: Once the eggs are cooked to your liking, fold in the sautéed sweet potatoes and half of the shredded cheddar cheese. Mix until everything is heated through and the cheese starts to melt.

          Assemble the Burritos: Place a large flour tortilla flat on a plate. Spoon a generous portion of the sweet potato and egg mixture into the center of the tortilla. Top with the remaining shredded cheese and a sprinkle of chopped cilantro, if desired.

            Roll the Burrito: Gently fold in the sides of the tortilla, then roll it up tightly from the bottom to the top. Repeat the process for the remaining tortillas and filling until all e burritos are assembled.

              Optional Toasting: For an extra crispy texture, return the rolled burritos to the skillet (seam side down) over medium heat. Cook for approximately 2 minutes on each side, or until golden brown and crispy.

                Serve: Cut each burrito in half diagonally and serve warm. Consider adding a side of salsa or hot sauce for a flavorful kick.
