4 slices of bacon, chopped into small pieces

1 cup fresh sweet corn kernels (alternatively, use frozen corn that has been thawed)

1 small onion, finely chopped

2 garlic cloves, minced

1 jalapeño pepper, seeded and finely diced (optional, for heat)

1 cup cream cheese, softened to room temperature

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

½ cup milk (use whole or 2% for creaminess)

1 teaspoon smoked paprika (for a smoky flavor)

1 teaspoon ground cumin (for warmth)

Salt and freshly cracked black pepper, to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips or fresh assorted veggies (for serving)

Cook the Bacon: Place a large skillet over medium heat and add the chopped bacon. Cook for about 5-7 minutes or until the bacon is crispy and golden. Once crispy, use a slotted spoon to remove the bacon from the skillet and transfer it to a plate lined with paper towels to drain excess grease. Leave the bacon grease in the skillet for additional flavor.

    Sauté the Vegetables: In the same skillet with the reserved bacon grease, add the finely chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent and soft. Next, add the minced garlic and diced jalapeño (if using), cooking for an additional minute until fragrant.
