1 lb (450g) boneless chicken breasts, cut into bite-sized pieces

1 ripe mango, peeled and diced into small cubes

1/4 cup sweet chili sauce

1 tbsp soy sauce

1 tbsp freshly squeezed lime juice

2 cloves garlic, minced

1 tsp fresh ginger, grated

2 tbsp olive oil

1/4 tsp black pepper

1/4 tsp salt

1/4 cup green onions, finely chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a medium mixing bowl, whisk together the sweet chili sauce, soy sauce, lime juice, minced garlic, grated ginger, black pepper, and salt until well combined. Add the chicken pieces to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for a deeper flavor infusion.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat until shimmering. Carefully add the marinated chicken pieces to the skillet, reserving the marinade for later use. Sauté the chicken for about 5-6 minutes, stirring occasionally, until the chicken is golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

      Add Mango and Sauce: Reduce the heat to medium and gently fold the diced mango into the skillet with the chicken. Pour in the reserved marinade, stirring everything together to ensure the chicken and mango are well coated. Allow the mixture to cook for an additional 2-3 minutes to enable the flavors to meld and the sauce to slightly reduce.

        Thicken the Sauce (Optional): If you prefer a thicker sauce, combine 1 tsp of cornstarch with 1 tablespoon of cold water in a small bowl to create a slurry. Add this mixture to the skillet and stir well. Cook for an additional minute, allowing the sauce to thicken to your desired consistency.

          Garnish and Serve: Once cooked, remove the skillet from heat and transfer the Sweet Chili Mango Chicken Bites to a serving platter.
