1 pound boneless, skinless chicken thighs

1 cup fresh pineapple chunks (or canned, drained)

1/2 cup red or yellow bell pepper, sliced

1/2 cup onion, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup low-sodium soy sauce

1/4 cup honey

2 tablespoons sriracha sauce (adjust to your spice preference)

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)

2 tablespoons vegetable oil (for cooking)

Salt and pepper to taste

Chopped green onions and sesame seeds for garnish

Instructions
 

Marinate the Chicken:

    In a large mixing bowl, whisk together the soy sauce, honey, sriracha, rice vinegar, minced garlic, and minced ginger until well combined. Add the chicken thighs to the bowl, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 30 minutes, or for enhanced flavor, marinate for up to 2 hours.

      Prepare the Vegetables:

        While the chicken is marinating, slice the bell pepper and onion into thin strips. Set aside in a bowl.

          Cook the Chicken:

            Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (set the marinade aside for later use) and season both sides lightly with salt and pepper. Cook the chicken in the hot skillet for about 5-7 minutes on each side, or until it is golden brown and fully cooked through. Once cooked, transfer the chicken to a plate and allow it to rest.

              Stir-Fry the Vegetables:

                In the same skillet, add the sliced onion and bell pepper to the remaining oil. Stir-fry the vegetables for approximately 3-4 minutes until they begin to soften but still retain some crunch.

                  Add Pineapple and Sauce:

                      Combine and Serve:

                        Slice the rested chicken into strips and return it to the skillet with the pineapple, sauce, and vegetables. Gently toss everything together until the chicken is coated with the sauce.

                          Garnish and Present:
