1 block (14 oz) firm tofu, thoroughly pressed and cut into bite-sized cubes

2 tablespoons cornstarch

3 tablespoons vegetable oil, divided

1 bell pepper (your choice of color), sliced into strips

1 cup sugar snap peas, trimmed of ends

1 cup pineapple chunks (fresh or canned)

½ cup red onion, thinly sliced

2 cloves garlic, finely minced

1-inch piece fresh ginger, grated

¼ cup soy sauce

¼ cup apple cider vinegar

2 tablespoons brown sugar

1 tablespoon ketchup

1 teaspoon sesame oil

Salt and pepper, to taste

Sesame seeds and chopped green onions for garnish

Prepare the Tofu: Start by pressing the tofu for at least 15 minutes to eliminate excess water. Once pressed, slice the tofu into even bite-sized cubes. In a medium mixing bowl, coat the tofu cubes evenly with cornstarch, ensuring all sides are covered for a crispy texture.

    Fry the Tofu: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Carefully add the cornstarch-coated tofu cubes to the skillet, ensuring they are spread out evenly. Fry them for about 8-10 minutes, turning occasionally, until they are golden brown and crispy on all sides. Once done, transfer the tofu to a plate and set aside.

      Sauté the Vegetables: Using the same skillet, add the remaining tablespoon of vegetable oil. Toss in the sliced red onion and sauté for 2-3 minutes or until it begins to soften. Add the bell pepper, sugar snap peas, minced garlic, and grated ginger. Stir-fry these ingredients together for another 4-5 minutes until the vegetables are tender yet still crisp.

        Make the Sweet and Sour Sauce: In a small mixing bowl, whisk together the soy sauce, apple cider vinegar, brown sugar, ketchup, and sesame oil until the mixture is smooth and well-combined.

          Combine Everything: Return the crispy tofu to the skillet with the sautéed vegetables. Pour the prepared sweet and sour sauce over the mixture. Gently stir everything together, allowing it to cook for an additional 2-3 minutes to ensure everything is heated through and the flavors meld beautifully.
