1 cup cucumber, julienned

1 cup fresh cilantro leaves

1 avocado, sliced

1/2 cup cream cheese, softened (or a vegan alternative)

Zest of 1 lime

Juice of 1 lime

Salt and pepper, to taste

1/4 cup sesame seeds (optional, for garnish)

Prepare the Filling: In a large mixing bowl, combine the julienned cucumber, sliced bell pepper, grated carrots, shredded red cabbage, fresh mint, fresh cilantro, and sliced avocado. Add the softened cream cheese, lime zest, and lime juice to the bowl, then season with salt and pepper. Gently mix all the ingredients until they are evenly combined, ensuring the avocado stays intact for texture.

    Soften the Rice Paper: Fill a shallow dish or wide bowl with warm water (not boiling). Submerge one rice paper wrapper into the warm water for about 10-15 seconds or until it is pliable but firm enough to hold its shape.
