1 ripe avocado, peeled and pitted

1 tablespoon fresh lime juice

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (smoked or regular)

4 whole wheat or spinach tortillas

1 cup fresh spinach leaves, washed and dried

1/2 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese (optional)

Fresh cilantro or parsley for garnish (optional)

Prepare the Egg Mixture: In a medium-sized mixing bowl, crack the eggs and add salt, black pepper, and paprika. Using a whisk or fork, beat the mixture until all ingredients are thoroughly combined and the eggs are slightly frothy. Set aside for later use.

    Cook the Eggs: Place a non-stick skillet on the stove over medium heat. Lightly grease the surface with cooking spray or a teaspoon of olive oil for non-stick cooking. Once the skillet is heated, pour in the egg mixture. Use a spatula to gently scramble the eggs, stirring occasionally until they are just set and no longer runny, about 4–5 minutes. Remove the skillet from heat and set the scrambled eggs aside.

      Prepare the Avocado Spread: In a small bowl, mash the avocado with a fork until creamy, leaving some small chunks for texture. Mix in the fresh lime juice and a pinch of salt, stirring well to combine. This will create a smooth and tangy avocado spread.

        Assemble the Wrap: Start by laying one tortilla flat on a clean surface or plate. Spoon approximately 2 tablespoons of the mashed avocado mixture into the center of the tortilla, spreading it out evenly. Layer the fresh spinach leaves over the avocado, followed by a quarter of the scrambled egg mixture, halved cherry tomatoes, and a sprinkle of feta cheese if you choose to add it.
