1 cup cooked quinoa (or substitute with rice)

1/2 cup diced salami

1/2 cup diced pepperoni

1/2 cup chopped prosciutto

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 cup black olives, sliced

1/4 cup sun-dried tomatoes, chopped

1/4 cup fresh basil, roughly chopped

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

Preheat the oven: Start by preheating your oven to 375°F (190°C) to ensure it's hot when the stuffed peppers go in.

    Prepare the bell peppers: Carefully slice the tops off each bell pepper and remove the seeds and membranes, creating a hollow cavity. Place the peppers upright in a lightly greased baking dish, ensuring they are stable.

      Make the stuffing: In a large mixing bowl, combine the cooked quinoa (or rice) with the diced salami, pepperoni, chopped prosciutto, shredded mozzarella, grated Parmesan, sliced black olives, chopped sun-dried tomatoes, and fresh basil.
