1 cup fresh strawberries, hulled and sliced

1/2 cup fresh mint leaves, tightly packed

1/4 cup granulated sugar

1/4 cup freshly squeezed lime juice (approximately 2 limes)

1 cup coconut water

1 cup Greek yogurt

1 tablespoon honey (optional, for added sweetness)

Zest of 1 lime

Pinch of salt

Prepare the Strawberries: In a mixing bowl, add the sliced strawberries and sprinkle with granulated sugar. Gently toss the strawberries until they are fully coated with sugar. Allow them to rest for about 10 minutes; this will help them release their natural juices.

    Create the Mint Lime Mixture: In a blender or food processor, combine the tightly packed mint leaves, freshly squeezed lime juice, coconut water, lime zest, and a pinch of salt. Blend until the mixture is smooth and the mint leaves are finely chopped, creating a fragrant and flavorful infusion.

      Combine All Ingredients: In a large mixing bowl, carefully combine the macerated strawberries (with their juices), Greek yogurt, and the mint-lime mixture. If you prefer a sweeter treat, drizzle in the honey. Using a spatula, gently fold the mixture together until all ingredients are well incorporated, taking care not to break down the strawberries too much.
