4 cloves garlic, minced

1-inch piece of fresh ginger, grated

1 medium onion, thinly sliced

1 bell pepper (red or yellow), sliced into thin strips

1 zucchini, julienned

1 cup snap peas, trimmed

1 cup mushrooms, thinly sliced

1 carrot, julienned

3 green onions, chopped

1/4 cup soy sauce

2 tablespoons oyster sauce (or hoisin sauce for a vegetarian option)

2 tablespoons sesame oil

1 tablespoon honey or maple syrup

1 teaspoon red pepper flakes (optional, for heat)

Sesame seeds, for garnish

Fresh cilantro or parsley, for garnish (optional)

Cook the Noodles: Start by boiling water in a large pot. Once boiling, add the rice noodles and cook according to the package instructions until al dente. Drain the noodles and rinse them under cold water to stop the cooking process and prevent them from sticking together. Set aside.

    Prepare the Sauce: In a small mixing bowl, combine the soy sauce, oyster sauce (or hoisin), sesame oil, honey (or maple syrup), and red pepper flakes (if using). Whisk these ingredients together until well blended and set aside for later use.

      Sauté Aromatics: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the minced garlic and grated ginger. Stir them together for about 30 seconds or until fragrant, being careful not to let them burn.

        Add Vegetables: Incorporate the sliced onion, bell pepper, julienned zucchini, snap peas, sliced mushrooms, and julienned carrot into the skillet. Stir-fry the vegetables for about 4-5 minutes, or until they are tender but still crisp, maintaining their vibrant colors.
