Ingredients

20 jumbo pasta shells

2 cups fresh spinach, finely chopped

1 cup ricotta cheese

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1 large egg, lightly beaten

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Salt and freshly ground black pepper to taste

2 cups marinara sauce

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it reaches the proper temperature for baking.

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Carefully add the jumbo pasta shells and cook according to the package instructions until they are al dente. Once cooked, drain the shells and set them aside to cool slightly.

Prepare the Filling: In a spacious mixing bowl, combine the finely chopped spinach, ricotta cheese, crumbled feta cheese, 1 cup shredded mozzarella, lightly beaten egg, grated Parmesan, minced garlic, dried oregano, dried basil, and season with salt and freshly ground black pepper. Mix all the ingredients thoroughly until well incorporated and creamy.

Stuff the Shells: Using a spoon or a piping bag for precision, generously fill each cooked pasta shell with the spinach and cheese mixture, ensuring each shell is packed snugly.

Prepare the Baking Dish: Pour half of the marinara sauce into the bottom of a 9x13 inch baking dish, spreading it evenly. Carefully place the stuffed shells in the dish, seam side up, to create a beautiful layer.

Add Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells, covering them entirely. Then, sprinkle any extra mozzarella cheese on top for a deliciously cheesy finish.

Bake: Loosely cover the baking dish with aluminum foil, ensuring it doesn't touch the cheese. Bake in the preheated oven for 25 minutes. Afterward, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbling and golden brown.

Garnish and Serve: Once baked, remove the dish from the oven and allow it to rest for a few minutes before serving. Garnish with freshly chopped parsley for a pop of color and added flavor.
