1 cup shredded carrots

1 cup snap peas, trimmed

2 green onions, finely chopped

1/4 cup fresh cilantro, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

For the Spicy Peanut Sauce:

1/3 cup creamy or crunchy peanut butter

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon sriracha (adjust to your heat preference)

1 teaspoon sesame oil

1 tablespoon freshly squeezed lime juice

1-2 tablespoons warm water (to adjust sauce consistency)

Instructions
 

Prepare the Noodles:

    - Bring a pot of water to a boil. Cook the rice noodles according to the package instructions, usually around 5-7 minutes, until al dente. Drain the noodles and rinse them under cold water to halt the cooking process and prevent sticking. Set them aside.

      Make the Spicy Peanut Sauce:

        - In a medium mixing bowl, combine the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sriracha, sesame oil, lime juice, and warm water.
