1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons soy sauce or tamari (for a gluten-free option)

1 tablespoon maple syrup or honey (depending on dietary preference)

1 tablespoon sriracha or your choice of hot sauce

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon freshly squeezed lemon juice

1/2 teaspoon ground cumin

Salt and pepper, to taste

8-10 large lettuce leaves (butter or romaine varieties are ideal)

1/2 cup shredded carrots

1/2 cup diced cucumber

1/4 cup chopped fresh cilantro

1/4 cup chopped green onions

Sesame seeds for garnish (optional)

Instructions
 

In a mixing bowl, add the drained and rinsed chickpeas. Using a fork or potato masher, lightly mash the chickpeas, ensuring to keep some whole for texture.

    In a separate bowl, combine the tahini, soy sauce (or tamari), maple syrup (or honey), sriracha, minced garlic, grated ginger, lemon juice, ground cumin, and a pinch of salt and pepper. Whisk together until the mixture is smooth and thoroughly combined.

      Pour the spicy tahini sauce over the mashed chickpeas and gently fold until all the chickpeas are coated with the sauce.

        To prepare the lettuce wraps, rinse the lettuce leaves under cold water and pat them dry with a clean towel.

          To assemble each wrap, place a generous spoonful of the spicy chickpea mixture in the center of a lettuce leaf. Top it with shredded carrots, diced cucumber, and a sprinkle of chopped cilantro and green onions.
