Spicy Shrimp Tacos with Mango Salsa

For the Spicy Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust based on your spice preference)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Juice of 1 fresh lime

For the Mango Salsa:

1 ripe mango, peeled and diced into small cubes

1/2 red onion, finely chopped

1 jalapeño pepper, seeds removed and finely diced

1/4 cup fresh cilantro, finely chopped

Juice of 1 fresh lime

Salt, to taste

For the Tacos:

8 small corn or flour tortillas

1 avocado, sliced

Lime wedges, for serving

Marinate the Shrimp: In a mixing bowl, combine the peeled and deveined shrimp with the olive oil, smoked paprika, chili powder, cayenne pepper, garlic powder, onion powder, lime juice, salt, and pepper. Stir everything together until the shrimp are well-coated in the marinade. Cover and let marinate for at least 20 minutes in the refrigerator to enhance the flavors.

    Prepare the Mango Salsa: In a separate medium bowl, gently mix the diced mango, finely chopped red onion, diced jalapeño, and chopped cilantro. Squeeze in the lime juice and add a pinch of salt to taste. Stir to combine and allow the salsa to sit for about 10-15 minutes, letting the flavors meld together beautifully.

      Cook the Shrimp: Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side, or until the shrimp become opaque and are cooked through. Remove from heat and set aside.

        Warm the Tortillas: In another skillet or pan, lightly warm the tortillas over medium heat for about 30 seconds on each side, or until they are soft and pliable. Keep them warm in a clean kitchen towel while you prepare the tacos.
