1 red bell pepper, diced

1 yellow bell pepper, diced

1 red onion, diced

1 cup cauliflower florets

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

8 small corn or flour tortillas

1 ripe avocado, sliced

Fresh cilantro, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). While the oven heats, prepare your baking sheet by lining it with parchment paper to prevent sticking.

    Prepare the Vegetables: In a large mixing bowl, combine the diced zucchini, red and yellow bell peppers, diced red onion, cauliflower florets, and corn. Ensure all the vegetables are evenly mixed for consistent roasting.
