Ingredients

For the Wings:

2 lbs chicken wings

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon ground black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to your spice preference)

For the Spicy Mango Drizzle:

1 ripe mango, peeled and diced

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon freshly squeezed lime juice

1 teaspoon fresh ginger, grated

1 teaspoon red chili flakes (adjust to your spice preference)

1 tablespoon fresh cilantro, finely chopped (for garnish)

Instructions

Prep the Chicken Wings:

Begin by rinsing the chicken wings under cold water and thoroughly drying them with paper towels to ensure optimal crispiness. In a large mixing bowl, add the wings and drizzle in the olive oil. Then, sprinkle the salt, black pepper, garlic powder, smoked paprika, and cayenne pepper evenly over the wings. Toss everything together until the wings are completely coated in the seasoning. For the best flavor, allow the wings to marinate for at least 30 minutes at room temperature, or for a deeper flavor, marinate them in the refrigerator overnight.

      Make the Spicy Mango Drizzle:

In a blender, combine the diced mango, honey, soy sauce, lime juice, grated ginger, and red chili flakes. Blend the mixture on high until it is completely smooth and all ingredients are well integrated. After blending, taste the drizzle and adjust the sweetness by adding more honey, or intensify the heat with additional red chili flakes, according to your liking.

          Cook the Wings:

Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil for easy cleanup and position a wire rack on top of it. This allows heated air to circulate around the wings, promoting even cooking and crispiness. Lay the marinated chicken wings in a single layer on the wire rack. Bake in the preheated oven for 35 to 40 minutes, flipping the wings halfway through the cooking time. They should emerge from the oven golden brown and crispy.

              Glaze the Wings:

Once the wings are perfectly baked, take them out of the oven and transfer them to a large mixing bowl. Pour the spicy mango drizzle over the wings and toss them gently to ensure each wing is thoroughly coated. For an added layer of flavor and a delightful caramelized finish, you can return the coated wings to the oven for an additional 5 to 10 minutes.

                  Serve:

Transfer the glazed wings to a serving platter, ensuring to drizzle any leftover mango sauce over the top for an enticing presentation. Garnish with finely chopped cilantro for added freshness and color. Serve with lime wedges on the side, allowing guests to squeeze fresh lime juice over the wings for a zesty kick that enhances the flavors!
