Ingredients

4 boneless, skinless chicken breasts

1 cup buttermilk

1 packet ranch seasoning mix

3 fresh jalapeños, finely chopped (remove seeds for milder flavor)

1 cup panko breadcrumbs

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional, for additional heat)

Salt and pepper to taste

Olive oil spray or cooking oil for coating

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the buttermilk and ranch seasoning mix until smooth and fully combined. Stir in the finely chopped jalapeños. Add the chicken breasts, ensuring they are fully submerged in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or, for the best results, let it marinate overnight.

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Coating Mixture: In a separate bowl, combine the panko breadcrumbs, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, cayenne pepper (if desired), and a generous pinch of salt and pepper. Mix well to ensure even distribution of spices.

Coat the Chicken: Once the marinating time is complete, take the chicken out of the refrigerator. Allow any excess marinade to drip off, then coat each chicken breast thoroughly in the breadcrumb mixture. Make sure to press down firmly so that the coating adheres well to the chicken.

Arrange for Baking: Place the coated chicken breasts on the prepared baking sheet, ensuring they are spaced apart for even cooking. Lightly spray the tops with olive oil to promote a golden, crispy texture during baking.

Bake the Chicken: Transfer the baking sheet to the preheated oven and bake for 25-30 minutes. The chicken is done when it reaches an internal temperature of 165°F (74°C) and the coating turns golden brown and crisp.

Rest and Serve: After baking, remove the chicken from the oven and let it rest for a few minutes before slicing. Serve the spicy chicken hot, accompanied by extra jalapeño ranch dressing for drizzling, fresh vegetables, or your favorite side dishes.
