1 can (15 oz) chickpeas, thoroughly drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (or to your preferred spice level)

½ teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1 head of butter or romaine lettuce, leaves carefully separated and washed

½ cup cucumber, diced into small cubes

½ cup ripe tomatoes, diced

¼ cup red onion, finely chopped

¼ cup fresh cilantro, roughly chopped

¼ cup avocado, diced

2 tablespoons tahini or yogurt-based dressing, for drizzling

Juice of 1 fresh lime

Prepare the Chickpeas: Preheat your oven to 400°F (200°C). In a medium mixing bowl, combine the drained chickpeas with olive oil, smoked paprika, ground cumin, cayenne pepper, garlic powder, and a pinch of salt and black pepper. Toss until the chickpeas are evenly coated with the spices.

    Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, stirring halfway through to ensure they cook evenly. Keep an eye on them during the last few minutes to prevent over-browning.
