12 oz spaghetti

1 whole head of garlic

1/2 cup unsalted butter (1 stick)

1/4 cup extra virgin olive oil

1/2 teaspoon red pepper flakes (optional for heat)

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon freshly ground black pepper

1 tablespoon fresh lemon juice

1/4 cup fresh parsley, finely chopped

Grated Parmesan cheese, for serving

Zest of 1 lemon (for garnish)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Carefully slice the top off the head of garlic to expose the individual cloves. Drizzle a small amount of olive oil over the exposed cloves and wrap the garlic tightly in aluminum foil. Place on a baking sheet and roast in the preheated oven for 30-35 minutes, or until the cloves are soft and caramelized. Once done, remove from the oven and let cool for a few minutes. Squeeze the roasted garlic cloves out of their skins into a bowl, discarding the skins.

        Cook the Spaghetti:

          - In a large pot, bring salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente. Before draining, reserve about 1 cup of the pasta cooking water. Once done, drain the spaghetti and set aside.

            Prepare the Garlic Butter:

              - In a large skillet over medium heat, add the unsalted butter and olive oil. Allow the butter to melt completely.
