2 large boneless, skinless chicken breasts

2 tablespoons extra virgin olive oil

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Sea salt and freshly ground black pepper, to taste

4 large flour tortillas

1 cup romaine lettuce, finely chopped

1 cup cherry tomatoes, halved

½ cup black beans, rinsed and drained

½ cup sweet corn (canned or fresh)

1 ripe avocado, sliced

1 cup shredded cheese (cheddar or Mexican blend)

½ cup chipotle ranch dressing (or your favorite creamy dressing)

Fresh cilantro, chopped (for garnish, optional)

Marinate the Chicken: In a medium bowl, whisk together the olive oil, chili powder, cumin, smoked paprika, garlic powder, sea salt, and black pepper until well blended. Add the chicken breasts, ensuring they are fully coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.

    Preheat the Grill: Preheat your outdoor grill or stovetop grill pan to medium-high heat. If using an outdoor grill, make sure it’s clean and lightly oiled to prevent the chicken from sticking.
