Slow Cooker White Chicken Chili

2 lbs boneless, skinless chicken breasts

1 medium onion, finely diced

3 cloves garlic, minced

2 (15 oz) cans of white beans (such as cannellini or great northern), drained and rinsed

1 can (4 oz) diced green chiles

1 cup frozen corn kernels

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp salt (adjust to taste)

1/4 tsp freshly ground black pepper

4 cups low-sodium chicken broth

1 cup heavy cream or half-and-half

Juice of 1 lime (about 2 tablespoons)

Fresh cilantro leaves, chopped (for garnish)

Optional toppings: sliced avocado, shredded cheese, sour cream

Instructions
 

Prepare the Chicken: Place the chicken breasts at the bottom of a slow cooker. Season them generously with salt, black pepper, ground cumin, chili powder, and smoked paprika for a flavorful base.

    Layer the Vegetables: On top of the seasoned chicken, add the diced onion and minced garlic. Next, layer in the drained white beans, diced green chiles, and frozen corn kernels.

      Add the Broth: Carefully pour the low-sodium chicken broth over the layers of chicken and vegetables. Gently stir the mixture to combine, ensuring the chicken stays at the bottom for even cooking.
