Ingredients

2 cups elbow macaroni

1 pound ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 can (10 oz) tomato sauce

1 medium onion, diced

3 cloves garlic, minced

2 cups shredded cheddar cheese

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

2 cups beef or vegetable broth

Optional toppings: sour cream, green onions, jalapeños, and additional cheese

Instructions

Sauté the Aromatics: In a large skillet over medium heat, add the diced onion and sauté for about 5 minutes, or until it becomes translucent and soft. Then, stir in the minced garlic and cook for an additional minute until fragrant. Transfer this aromatic mixture to your slow cooker.

Brown the Meat: Using the same skillet, add the ground beef or turkey. Season the meat with salt, black pepper, chili powder, cumin, and smoked paprika. Cook it for about 7-10 minutes, breaking it apart with a spatula until browned and fully cooked. Drain any excess grease, then add the meat mixture to the slow cooker.

Combine Ingredients: In the slow cooker, incorporate the elbow macaroni, kidney beans, black beans, diced tomatoes (including juices), tomato sauce, and beef broth. Stir everything together until well unified.

Slow Cook: Cover the slow cooker and cook on low for 4-5 hours or on high for 2-3 hours. The goal is to ensure the pasta is tender and the flavors are well blended.

Add Cheese: Approximately 30 minutes before you plan to serve, stir in 1.5 cups of shredded cheddar cheese. Stir until the cheese is melted and the mixture is creamy. If the consistency is too thick, don’t hesitate to add a splash of broth or water to achieve your desired texture.

Serve: Spoon the Chili Cheese Mac into bowls, and enhance each serving with the remaining cheese on top. Personalize your dish with optional toppings such as sour cream, sliced green onions, and jalapeños for an extra kick.
