Ingredients

1 lb large shrimp, peeled and deveined

1 bell pepper, sliced (choose red, green, or yellow for color variety)

1 small red onion, thinly sliced

2 cloves garlic, minced

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

4 large aluminum foil sheets (approximately 12x12 inches each)

Instructions

Prepare the Ingredients: In a large mixing bowl, combine the peeled and deveined shrimp with the sliced bell pepper, red onion, and minced garlic. Add the Cajun seasoning, paprika, dried thyme, and a sprinkle of salt and pepper. Drizzle the mixture with olive oil and lemon juice. Toss gently until all ingredients are well coated in the spices and oil.

Create Foil Packets: Lay out the four sheets of aluminum foil on a flat surface. Divide the shrimp and vegetable mixture evenly among the center of each foil sheet. Be sure to leave some space around the edges to fold and seal the packets.

Seal the Packets: Fold the sides of the foil over the mixture, then bring the top and bottom edges together to create a tight seal. Ensure the packets are well-wrapped to trap steam during cooking.

        Cooking Options:

          - Grilling: Preheat your grill to medium-high heat (about 400°F). Place the sealed foil packets directly on the grill grates. Cook for approximately 10–15 minutes, or until the shrimp are pink, opaque, and cooked through.

            - Oven: Preheat your oven to 400°F (200°C). Arrange the foil packets on a baking sheet and bake for 15–20 minutes, until shrimp are thoroughly cooked.

Serve: Carefully open the foil packets, taking care to avoid the hot steam escaping. Transfer the contents to serving plates. Garnish with freshly chopped parsley and serve instantly. This dish pairs wonderfully with a slice of crusty bread or can be served over a bed of rice for a more filling meal.
