2 boneless, skinless chicken breasts

1 cup basil pesto (either store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup mozzarella cheese, shredded

1 tablespoon olive oil

1 teaspoon garlic powder

1 French baguette or Italian ciabatta, sliced into 1-inch pieces

Fresh basil leaves, for garnish (optional)

Balsamic glaze, for drizzling (optional)

Prepare the Chicken: Begin by seasoning the chicken breasts evenly with garlic powder, salt, and pepper to enhance the flavor. In a large skillet, heat the olive oil over medium heat until shimmering.

    Cook the Chicken: Carefully add the seasoned chicken breasts to the skillet. Sear the chicken for approximately 5-7 minutes on each side, cooking until the internal temperature reaches 165°F (75°C) and the meat is no longer pink in the center. Once cooked, remove the chicken from the skillet and set aside to rest for a few minutes.

      Add Pesto and Cheese: Generously spread the basil pesto over the top of each chicken breast, ensuring they are well-coated. Next, sprinkle a generous amount of shredded mozzarella cheese atop the pesto.

        Melt the Cheese: Cover the skillet with a lid, reducing the heat to low. Allow the chicken to sit for an additional 3-5 minutes, letting the cheese melt beautifully and the flavors meld together.

          Prepare the Baguette: While the chicken is melting away in the skillet, slice the baguette or ciabatta into 1-inch thick pieces. Toast each slice in a separate skillet or toaster until they are golden brown and crisp.
