Ingredients

2 cups heavy cream

1 cup whole milk

3/4 cup honey (preferably raw for a richer flavor)

2 tablespoons dried culinary lavender flowers

5 large egg yolks

1 teaspoon vanilla extract

Pinch of salt

Instructions

Infuse the Cream: In a medium saucepan, combine the heavy cream, whole milk, and dried lavender flowers. Gradually heat the mixture over medium-low, stirring gently until it becomes hot but does not reach a boiling point. Once heated, remove from the heat and allow the lavender to steep for 15-20 minutes, letting the flavors develop.

Whisk the Egg Yolks: In a clean mixing bowl, whisk together the egg yolks and honey until the mixture is well combined and takes on a slightly thickened consistency. This will create a rich base for your ice cream.

Temper the Egg Mixture: To prevent the eggs from scrambling, slowly drizzle the warm cream mixture into the egg yolk and honey mixture while whisking continuously. This process, known as tempering, helps to gradually raise the temperature of the yolks.

Cook the Mixture: Pour the combined mixture back into the saucepan and heat over medium heat. Stir constantly with a wooden spoon or spatula until it thickens enough to coat the back of a spoon, which should take approximately 5-7 minutes. Be vigilant and avoid boiling.

Strain the Mixture: Once thickened, remove the saucepan from the heat. Strain the mixture through a fine-mesh sieve into a clean bowl to eliminate the lavender flowers and create a smooth texture.

Add Flavors: Stir in the vanilla extract along with a pinch of salt to enhance the flavors. Allow the mixture to cool to room temperature, then cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to maximize flavor development.

Churn the Ice Cream: After chilling, pour the mixture into your ice cream maker and churn it according to the manufacturer's instructions. Churn until it reaches a soft-serve consistency.

Freeze: Transfer the churned ice cream into an airtight container. Freeze it for a minimum of 4 hours, or until it is firm and ready to scoop.

Serve: When ready to indulge, scoop the silky lavender honey ice cream into elegant bowls or delightful cones. Enjoy the refreshing floral sweetness and creamy texture of this enchanting treat!
