4 bone-in, skin-on chicken thighs

2 large sweet potatoes, peeled and cut into 1-inch cubes

1 cup of your favorite BBQ sauce

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon honey (optional, for added sweetness)

Fresh parsley, finely chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure a crispy finish for the chicken and tender sweet potatoes.

    Prepare the Chicken: In a medium bowl, place the chicken thighs. Pour half of the BBQ sauce over them and, using your hands or a brush, thoroughly coat each thigh for even flavor. Set aside the remaining BBQ sauce for later glazing.

      Season the Sweet Potatoes: In another mixing bowl, combine the sweet potato cubes with olive oil, garlic powder, smoked paprika, thyme, salt, and black pepper. Mix everything well to ensure each sweet potato piece is evenly coated in the seasoning.

        Arrange on a Sheet Pan: Line a large sheet pan with parchment paper or aluminum foil for easy cleanup. Spread the seasoned sweet potatoes in a single, even layer. Then, place the BBQ-coated chicken thighs on top of the sweet potatoes.

          Bake: Place the pan in the preheated oven and bake for approximately 35-40 minutes. The chicken is done when it has reached an internal temperature of 165°F (75°C) and the sweet potatoes are fork-tender.
