Ingredients

8 large eggs

2 cups whole milk

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

2 cups fresh spinach, chopped

1 cup bell peppers, diced (a colorful mix of red, yellow, and green)

1 cup mushrooms, sliced

1 small onion, diced

1 tablespoon olive oil

4 cups cubed day-old bread (French or Italian works best)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13 inch (or comparable size) casserole dish with cooking spray or a drizzle of olive oil to prevent sticking.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until the onion is translucent. Next, introduce the diced bell peppers and sliced mushrooms to the skillet. Cook for an additional 5 minutes, stirring occasionally, until these vegetables begin to soften. Finally, fold in the chopped spinach and cook until it wilts, which should take about 2 minutes. Once done, remove the skillet from the heat and set it aside.

Prepare the Egg Mixture: In a spacious mixing bowl, whisk together the eggs and whole milk until well combined. Add the salt, black pepper, garlic powder, and onion powder, and mix until smooth and evenly integrated.

Combine Bread and Cheese: In a large mixing bowl, combine the cubed day-old bread with the sautéed vegetable mixture, shredded cheddar cheese, and mozzarella cheese. Toss everything together until the bread and cheeses are evenly coated with the vegetables.

Assemble the Casserole: Carefully pour the prepared egg mixture over the bread and vegetable combination. Ensure that all the bread cubes are thoroughly soaked with the egg mixture to achieve a deliciously custardy texture. Gently fold the mixture together to make sure all the ingredients are well combined.

Bake the Casserole: Transfer the entire mixture into the greased casserole dish, spreading it out evenly. Cover the dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes. After this initial bake, remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden and a knife inserted into the center comes out clean.

Garnish and Serve: Allow your casserole to cool for about 5 minutes once done. Just before serving, sprinkle freshly chopped parsley over the top for a pop of color and flavor. Slice into squares and enjoy warm!
