1 lb ground turkey

2 medium sweet potatoes, peeled and diced into small cubes

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup fresh spinach leaves, chopped

1 tsp smoked paprika

½ tsp ground cumin

½ tsp dried thyme

Salt and pepper to taste

2 tbsp olive oil

¼ cup low-sodium chicken broth (or water)

Fresh parsley for garnish (optional)

Prepare Ingredients: Start by thoroughly washing, peeling, and dicing the sweet potatoes into small cubes. Next, finely dice the onion and red bell pepper, and mince the garlic cloves to prepare for cooking.

    Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the diced sweet potatoes. Season them lightly with salt and pepper. Sauté for approximately 8-10 minutes, stirring occasionally, until the sweet potatoes begin to soften and just turn golden.

      Add Aromatics: Incorporate the diced onion, minced garlic, and red bell pepper into the skillet with the sweet potatoes. Continue to cook for another 5-7 minutes, stirring frequently, until the onions are translucent and the peppers have softened.

        Cook Turkey: Move the sweet potato mixture to one side of the skillet. Add the remaining tablespoon of olive oil to the cleared space. Introduce the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook, stirring frequently, until the turkey is browned and no longer pink, approximately 5-7 minutes.
