Savory Sausage and Spinach Stuffed Shells

20 jumbo pasta shells

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 lb Italian sausage (casings removed)

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This step is crucial to ensure even baking.

    Cook the Pasta Shells: In a large pot, bring salted water to a rolling boil. Gently add the jumbo pasta shells and cook according to the package instructions until they are al dente. Once done, carefully drain the shells and set them aside to cool.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion turns translucent and fragrant.

        Cook the Sausage: Incorporate the Italian sausage into the skillet, breaking it into smaller pieces with a wooden spoon. Cook until the sausage is browned and completely cooked through, around 6-8 minutes. If there's excess fat, drain it carefully.

          Add Spinach: Combine the chopped spinach with the sausage mixture in the skillet. Cook for about 2 minutes, stirring until the spinach is wilted. Remove the skillet from heat and let it cool slightly before proceeding.

            Prepare the Filling: In a large mixing bowl, combine the sausage and spinach mixture with ricotta cheese, shredded mozzarella, 1/4 cup of the grated Parmesan cheese, Italian seasoning, and season with salt and pepper. Mix everything until well combined to create a hearty filling.
